Prep Ahead Hot Jarred Lunch ~ Quinoa & Veg

 


I've been taking this healthy lunch to work regularly.  It's easy to prep for the week using leftovers and frozen veg.  The warmer is what led me to this idea.  I've included a link to this aWeSoMe jar warmer, but even if you don't have one, you can still take this jarred lunch with a plastic lid if you have a microwave at work.  I'd venture to say this would even be great cold!  However you pack and prepare yours, this is an easy option to keep your work lunches healthy!

No More Anemia! ~ Blood Builder Salad with Creamy Orange Vinaigrette

 


I had this salad often while trying to build from severely anemic back up to healthy iron/hemoglobin levels.  Thanks mainly to chicken livers and beets, I reached a healthy level from food sources alone, without supplements.

Beet & Berry Fro-Yo

 


My new fave!  Not everyone is thrilled about the idea of beets, but I encourage you to give this a try.  I worked on this recipe for a while and I think I finally have it perfected.  Beets can be a little bit overpowering but the other ingredients work well together and really keep it in balance.  The Greek yogurt offers gut healthy probiotics and calcium for strong bones.  The beets offer blood-building benefits, sweetened naturally with fruit and honey.  This cold, sweet Summer treat is a nutritional powerhouse and it's DELICIOUS!

Green Goddess Breakfast Flip


This is my egg & avocado breakfast version of the viral tortilla hack.  First of all, I used the Spinach and Herb Extreme Wellness tortillas.  They're so healthy and so low in calories.  This size is only 50 calories each.  I love making sandwich wraps with these because of the low calorie count, not to mention the wonderfully healthy ingredients in them.  They're made with 100% whole wheat, flax seed, olive oil... So much goodness!  They're one of my new faves for breakfast, lunch, dinner, and snack.  I filled my wrap with eggs, Baby Swiss, and more green goodness: spinach, avocado, and Greener Goddess dressing.  You can make these Flips with your own healthy favorites.

Cashew Chicken for 2 with Secret Ingredient Lower Sodium Sauce

 


Don't deprive yourself of the dishes that you love.  Instead, replace the not-so-healthy ingredient with something better for you.  I've got a great ingredient substitute in my sauce for this Cashew Chicken for 2.  

In the stir fry part of the meal, I kept it very simple:  
chicken, bell peppers, broccoli,  green onions, pineapple, and cashews.  I used frozen broccoli, which is just as good as fresh in my opinion.  Whether homegrown or store-bought, veggies frozen at their peak freshness really do retain that fresh flavor along with all the great nutrients.  I also used canned pineapple..  This was because I wasn't able to get out to buy a fresh pineapple.  Fresh pineapple and canned pineapple are worlds apart in flavor.  You just can't beat a fresh pineapple! 😋🍍  But again, frozen retains flavor so well.. If you have frozen, that would be better than the canned here.  If you do use canned, be sure to get it packed in 100% juice, no added sugar.  We like natural sugars!  No matter if you're using fresh, frozen, or canned, always check your labels for added sugar and other additives.  If you choose your ingredients wisely, there's no reason you can't pull from your freezer and pantry.  I sautéed this all in healthy avocado oil.  

In the sauce is where we are making the smartest choices and substitutions.  I used fresh garlic and fresh ginger (which freezes beautifully too btw) (it's even easier to grate when it's frozen).  For my acid I chose RAW Apple Cider Vinegar (with the Mother).  This is always my Healthie vinegar of choice.  For my sweetener: RAW Honey.  Again, I like to use honey as the sweetener whenever possible.  Sooo many health benefits.  (You can find out more about the benefits of raw honey in my "Did You Know Honey" video.  And for my secret ingredient, I replaced the soy sauce with Coconut Aminos, my newest Healthie discovery.  This soy sauce replacement contains only: Organic Coconut Blossom Nectar & Himalayan Salt!  It has 45% less sodium than soy sauce.  I've fallen in love with this Better Body Foods brand and I can't wait to see what else they have to offer.

Serve this over a bed of healthy grain such as quinoa or brown rice and enjoy! (without guilt).
