Besides making our delicious honey, bees could never be replaced as pollinators for so many other of our foods. We literally would die without them. So, be informed of the dangers that our bee population faces. Help protect our little friends: say NO! to pesticides and herbicides. Grow a bee-friendly flower garden and be sure to include healthy raw honey in your diet.

Yum! One of nature's healthiest, mOsT DeLiCiOus gifts! Our locally foraged "Hickory Chickens" are otherwise known as the gourmet delicacy, morel mushrooms. Hickory Chickens are a foraged mushroom that Mother Nature knows how to cultivate to perfection. However, we haven't quite figured out all of her secrets on this one and haven't been successful in commercial cultivation as yet. If you find these in the grocery store you will pay a pretty penny for them. However, if you live in an area that Mother Nature decided to bless with these jewels, you can get them FREE! There is a narrow window of opportunity to find them each year, for just about a week or two in early Spring. Here in Southeastern Kentucky, now is the time! (The first week or two of April). Bonus: When foraging from nature (or growing your own food at home), you can be certain that you are getting organic, chemical-free, non-gmo, safe, and healthy food! CAUTION!: Mushroom foraging can be dangerous if you don't know what you're looking for! There are poisonous false morels that grow in these areas, often even right among the true morels. I have come upon these myself while hunting mushrooms. Before you go hunting for Hickory Chickens, you must be 110% certain that you can tell the difference. NEVER eat mushrooms that you aren't certain of. If you do go Hickory Chicken hunting, please help Mother Nature to ensure future crops by cutting (not pulling) your mushrooms at the ground and gather them in a MESH bag. The mesh will allow the spores to fall to the ground as you go through the woods and distribute them for possible future growth of more mushrooms. Also, when you get them home, give them a first soak in plain cold water. NO SALT until the second soak. Dash the water from your first clean soak back out into the areas that they were found. If there are any viable spores in there, this will give them an opportunity to grow as well. These are very important guidelines to follow. We don't want to tromp in and destroy nature's eXtReMeLy delicate system for growing these. Respect her garden! Most recipes you find for Hickory Chickens will be breaded and deep fried. But in today's video, I'm gonna show you a healthier way to prepare them. And in my opinion, this way is not only healthier, but way more delicious. Hickory Chickens have such an amazing flavor! Bone Broth is one of my most favorite Healthie options for my family. Drink it straight or use it in soups, stews, gravies, breads, etc.. I like to add in this broth everywhere I can to make sure we get plenty of opportunity to take in its wonderful health benefits. These overnight oats are a quick and easy breakfast, even on the go. They're great for a psoriasis diet, heart health diet, weight loss, and more! They're super good for you no matter what health regimen you follow. They're great to jump start your metabolism in the morning and keep you full with less than 300 calories. Even though I don't work outside the home, I still like to prep ahead for breakfast. I'm just not a morning person.. I don't want to be cooking when I first wake up, and I find that I'm more likely to eat breakfast if I have it prepped and ready. I like to prep ahead enough of these to last me the week, adding only the dry ingredients to the jar. Then, each night, I add the almond milk to one for the next morning and leave it in the fridge overnight. The next morning you can have them cold, right out of the fridge or heat them up. I like to microwave mine for 45 seconds and add a couple teaspoons of delicious homemade Coconut Honey Butter. For the Tablespoon of coconut and Tablespoon of almonds, you can easily substitute dried fruit and any other nut of your choice. The flavor options are endless. Some people like to add chocolate chips and such, but I prefer not to add candy-like ingredients. Perhaps, dark chocolate wouldn't be so bad... occasionally. However, on a regular basis, I would choose fruit and nuts to keep it as healthy as possible. You could also add in some healthy spices after microwaving. Cinnamon is a great healthy example. You could even add in some Pumpkin Spice seasoning. How about some freshly grated ginger? I can think of so many options. In fact, I may do more on these in the future with some alternative variations, beyond the coconut and almonds in today's basic recipe. Well, coconut and almonds are the basic for me at least. This is my go-to recipe that is the standard in my book. I do love some variations occasionally though, so watch for those a little later on. TO A 1 CUP JAR ADD:
1/3 cup Oats (I used Old Fashioned Oats)..................................................100 calories

COCONUT HONEY BUTTER
INGREDIENTS:
1 part Virgin Coconut Oil
1 part Raw Honey
(Make any size batch you want, as long as you use equal parts.) DIRECTIONS:
Add your honey to a jar.
Microwave the coconut oil on high power just until barely melted. Even softened will work. Just make sure you don't heat it beyond the point of just melted. Heat can destroy the natural benefits of coconut oil. But, you won't have to reach a high damaging temperature, as coconut oil melts at 76°F.
Whisk, stir, or add lid and shake, until combined. Mixture will begin to emulsify as the coconut oil cools back down.
*DO NOT FEED HONEY TO INFANTS UNDER 1 YEAR OF AGE*
Store at room temperature. Do not refrigerate. At cold refrigerator temperatures coconut oil will become too hard to spread and honey will crystallize.
At room temperature, if it gets above the 76° melting point, the coconut oil may melt and cause the mixture to separate a little. This is normal and can be expected. No problem! Just give it a quick stir to recombine before using.
Coconut Honey Butter is absolutely delicious! When the honey sweetens the coconut flavor of the oil, it's like candy! Spread it on toast. Add it to your morning oats (or other hot cereals). Add it to smoothies. Use it anywhere you would use regular honey butter. OR do like I like to do sometimes.. just eat a spoonful right out of the jar! It's that delicious.
